Banana Cranberry Muffins
This one is from the old allrecipes, cut down from more than a single muffin pan.
Makes: 9 muffins.
Ingredients
- 1 c. fresh or frozen cranberries
- ½ c. sugar
- 1 c. water
- ⅓ c. sugar
- ⅙ c. shortening
- 1 egg
- ⅞ c. all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ⅛ tsp baking soda
- ½ c. mashed ripe banana
- ¼ c. chopped walnuts
Directions
- Boil cranberries in water with ½ c. sugar.
- Simmer uncovered 5-7 minutes or until berries start to pop.
- Drain and set aside.
- Preheat oven to 400°.
- Prepare muffin pan with cups or spray.
- Combine the flour, baking powder, salt and baking soda, and set aside.
- Cream shortening and remaining sugar.
- Add egg and beat.
- Add flour mix to shortening mixture along with banana.
- Fold in cranberries and nuts.
- Divide batter between about 9 muffin cups. Partly fill the other three with water.
- Bake for 15-20 minutes or to the toothpick test.
- Cool in pan 5 minutes, then on a wire rack.
