Banana Cranberry Muffins

This one is from allrecipes, also cut down to about 9 muffins.

Ingredients

  • 1 c. fresh or frozen cranberries
  • ½ c. sugar
  • 1 c. water
  • ⅓ c. sugar
  • ⅙ c. shortening
  • 1 egg
  • ⅞ c. all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ⅛ tsp baking soda
  • ½ c. mashed ripe banana
  • ¼ c. chopped walnuts

Directions

  1. Boil cranberries in water with ½ c. sugar.
  2. Simmer uncovered 5-7 minutes or until berries start to pop.
  3. Drain and set aside.
  4. Preheat oven to 400°.
  5. Combine the flour, baking powder, salt and baking soda, and set aside.
  6. Cream shortening and remaining sugar.
  7. Add egg and beat.
  8. Add flour mix to shortening mixture along with banana.
  9. Fold in cranberries and nuts.
  10. Bake for 15-20 minutes or until the toothpick test.
  11. Cool in pan 5 minutes then on wire racks.
