Baked Tilapia

I got some whole dressed tilapia from HMart, so I adapted this recipe to a whole fish because it sounded yummy.

Serves 2–3

Ingredients

  • 1 whole dressed tilapia (about 1 ⅓ lbs)
  • 2 T. butter
  • 2 tsp. diced garlic (from a jar)
  • ¼ tsp. paprika
  • ¼ tsp. thyme
  • ¼ tsp. oregano
  • salt to taste
  • pepper to taste (optional)
  • 1 T. lemon juice

Directions

  1. Preheat oven to 350°F with convection.
  2. Line a cookie sheet with aluminum foil, being sure to go up the edges or otherwise make it ready to hold liquid.
  3. Optionally slash the skin of the fish a few times, at least on the top side.
  4. Place fish in foil.
  5. Mix remaining ingredients in a small glass bowl.
  6. Microwave bowl on medium power for 30 seconds or until butter is partly melted.
  7. Remove and stir.
  8. Pour most of the mixture into the cavity of the fish.
  9. Rub the top of the fish with some of the mixture.
  10. Bake 25 minutes or until flaky.

Variants

Most whole tilapia recipes specify 15–25 minutes at 400°F. I chose a lower temperature because I prefer that for fish, and because I had something else warming in the oven at the same time.
