Kielbasa Soup
Based on Kielbasa Potato Soup and various similar recipes, but not the large number that included a can of some other soup as part of the recipe.
Ingredients
- 2 T. olive oil
- 1 onion, chopped
- 3 or more large garlic cloves, minced
- up to 1 lb. kielbasa, sliced
- 3 c. chicken or beef stock
- 4 medium potatoes, peeled and chopped
- 1 bell pepper, chopped
- heaping ¼ tsp. red pepper flakes
- dried oregano
- tumeric
- salt
- pepper
Directions
- Saute onions in oil.
- Add garlic.
- Add kielbasa slices and saute to desired brownness.
- Add the broth and bring to a simmer.
- Add the potato, bell pepper, and spices.
- Cover and cook until potato is cooked.
Serve hot with crusty bread.
Variants
There was supposed to be basil.
You don’t need an entire pound of kielbasa.
