Roasted Brussel Sprouts

This recipe is a combination of the first thing the internet told me about roasting Brussel sprouts (with grapes) and the second thing the internet told me (with mushrooms). The internet was particularly unclear about the appropriate temperature.


  • 1 lb. Brussel sprouts
  • seedless dark grapes to taste, or up to 1 lb. mushrooms
  • olive oil
  • balsamic vinegar and/or 2 cloves garlic, crushed
  • 4 tsp. fresh thyme, or dried thyme to taste
  • kosher salt to taste
  • black pepper to taste


  1. Preheat oven to 375°–450°.
  2. Mix all ingredients.
  3. Arrange in a single layer on a baking sheet.
  4. Roast 20–25 minutes until sprouts are tender, stirring occassionaly.
