Roasted Green Beans
This recipe began life as Oven Roasted Green Beans by Emeril Lagasse. Green bean measurement is omitted because Peter is in charge of eyeballing them; Emeril had said 1 ½ lbs for six people, with the same amount of spices.
Serves 2.
Ingredients
- fresh green beans for two
- 2 T. olive oil
- 1 tsp. kosher salt
- ½ tsp. black pepper
Directions
- Trim the beans.
- Mix with oil, salt, and pepper.
- Arrange in a single layer in a roasting pan.
- Roast 15 minutes at 400°, stirring halfway through.
Variants
Combine with roasted potatoes (during the last 15 minutes).
